First Brisket on Bubba Grills 250R

Image
My wonderful smoker On Saturday I started smoking a brisket at 1:30 PM.  The brisket was not done until Sunday morning at 8 AM.  This brisket was my longest smoke to date at 19 hours.  This brisket was also a test brisket on my new Bubba Grills 250R smoker. I am going to post a few pictures of the smoke. Here is the brisket that I bought from Sam's Club.  It is about 11 pounds and was $4.50 per pound. I was told by Lonnie Smith the owner of Bubba Grills that the best way to prepare the inside of the new smoker was to spare it with PAM.  I took two cans and sprayed the inside of the smoker and the racks. I used my shop vacuum to get debris out of the smoker before applying the PAM Here is my wood pile that has been sitting for two years. One of the nice features of this smoker is the propane starter.  I will never have to scramble for kindling.  When my fire almost went out at 3 AM, all I had to do was light the propane and ...

Finally Getting a New Smoker

In May of 2014 I wrote about the  Reverse Flow Smoker .  I am happy to say that I have placed an order with Bubba Grills for a 250R on a wide trailer with a bat wing table.  I should have delivery of the smoker in a few weeks.  I have been without a smoker for a few years now since a big hickory tree smashed my old smoker on March 3, 2014.  I like smoking beef brisket . My old smoker under a pine tree.  The pine tree was one of several trees taken down by the large hickory tree that fell in my backyard. This shows the optional propane fryer that I am not getting. This shows the optional propane fryer that I am not getting. This shows the optional narrow trailer I am not getting.  It does show the rack space.

Why do I like to BBQ

Beef brisket samich I had fun this past Labor Day weekend smoking two beef briskets.  Every time I take the time to fire up my little smoker so I can BBQ some meat I think about why I do it.  It takes a lot of effort and patience to smoke beef briskets.  A typical brisket that I smoke can take 12 to 16 hours.  If I love eating brisket why not just settle for eating brisket at a restaurant like Sonny's? The love of smoking meat on hardwood was instilled in my when I was about 8 or 9 years old. Both my father and my mother were born and raised in the country of Texas.  My dad was from a small central Texas town called Winchester.  My mom was from an east Texas city called Texarkana .  I was not born in Texas.  I was born in Glenridge New Jersey , but my parents moved to Los Angeles when I was two years old so I grew up in California. I suppose this would be a good time to define some terms for this discussion.  To me the term Bar-B-Que...
